淡水飲食[編輯]
淡水阿給
|
- 將油豆腐切開,挖出部分豆腐。
- 冬粉浸泡15分鐘,並剪成小段。
- 熱油鍋,並放入豬絞肉和油蔥酥拌炒。
- 加入冬粉及其他調味料,攪拌至冬粉均勻上色。
- 將炒好的冬粉包入油豆腐,以魚漿封口。
- 放入蒸鍋,以中小火蒸約15分鐘。
- 取出蒸好油豆腐,淋上甜辣醬、放上香菜即完成。

- 源自1965年楊鄭錦文女士所發明,起初是為了不想浪費賣剩的食材,而想出的特殊料理方式。

淡水蝦捲
|
- 將新鮮的大隻蝦仁與後腿豬肉拌入地瓜粉打成漿。
- 以蔥花、胡椒粉、五香粉、鹽等調味。
- 以大餛飩皮捲好餡料,放入油鍋以90度油溫炸成金黃色。
- 將三個串成一串,刷上特別調製的蒜頭、醬油、甜辣醬,就是酥脆有味的蝦捲。

- 據說蝦捲的由來,可以追溯到30年前,是以前擺攤於淡水河邊的某一個阿伯發明的。

|
淡水魚酥
|
- 將海鰻去骨、皮備用。
- 將材料攪拌均勻備用。
- 取一調理機(果汁機亦可),放入作法1處理完成的海鰻及所有調味料,充分攪拌均勻。
- 取出適量大小,裹上適量的作法2完成之蕃薯粉,放入熱油鍋中,炸成金黃色後撈起瀝乾油脂即可。

- 民國42年(1953)時,由許炳松先生創建(人稱許義),他原本賣得是魚丸,可是卻為每天賣不完的魚大傷腦筋,而魚酥則解決了魚因不新鮮賣不出去的問題。

鐵蛋
|
- 將蛋洗淨後,放入電鍋蒸熟,外鍋放約一杯半的水。
- 拿出後泡入冷水,並將蛋殼全部去除。
- 將蛋泡入醬汁中,電鍋外鍋放三杯水去蒸。
- 取出吹涼,再放入鍋內,一樣以三杯水蒸,重覆數次(隨著次數增多,蛋會越縮越小,有嚼勁,可依個人喜好調整次數)。

- 鐵蛋的由來據說是一名經營早餐店與兼賣滷蛋的楊碧雲女士,無意將蛋滷的過久,蛋就變成了又黑又硬的滷蛋,品嚐起來的味道是非常美味的,後楊女士就將此蛋稱為「鐵蛋」。

阿媽酸梅湯
|
- 將曬乾的梅子漬在甕裡三個月,原料以梅子為主藥及導引。
- 加入中藥漢方:香粉、紫蘇類,例如茵陳、洛神花、蟬殼、參鬚、菊花、益母、百子、寄生、薄荷...等十七種中藥材。
- 全部一起用土窯慢火燉煮來釀製。

- 開業至今已有幾年的時間,最早的舊攤位在淡水河邊之渡船頭,其攤位設計古樸有味,讓人覺得彷彿回到早年的臺灣時期。口味也和一般酸梅湯不同,不僅甘美可口,更具養顏美容的功效。

- 目前已歇業。
- 義裕排骨的前身,是早在日治時期即由第一代創立的「許榮發號」,從早期的柑仔店、冰果室,直到現在的排骨店。現在店裡還掛著日治時期日本學生來柑仔店買東西的照片,來這兒吃碗排骨飯,還能透過牆上的老照片緬懷老淡水歷史。
